Variety Jones expands with a new restaurant next door

According to the Sunday Business Post, Keelan Higgs hoped the new location would open by April.

The new spot is located in the vacant building next door to its current premises. The current location will pivot to a more casual fair while the bigger neighbouring spot will take the place of the current Michelin Star offering. Till then, it will be business as usual in their Dublin 8 micro restaurant.

Variety Jones is a small Michelin-starred restaurant on Thomas Street in Dublin 8. Due to its tiny size, reservations are competitive and rare as a shiny pokemon card.

The restaurant is a gutsy, charismatic spot where the wines are natural, and the food makes you feel good. It was opened by Keelan Higgs and his brother Aaron just before Christmas 2018. Keelan has earned his stripes and weathered storms in some of the top kitchens in Ireland over the past decade.

The restaurant takes its name from Variety Jones (Roger Thomas Clark), one of the founders of the online market Silk Road. The space is open plan with the kitchen fully visible.
