Scéal Bakery are getting their own premises in Dublin

Words: Emily Mullen

“The future is bright”

Scéal Bakery has announced that they are on the lookout for their own retail unit in Dublin. The bakery run by Shane Palmer and Charlotte Leonard Kane has been operating out of Dublin 8’s The Fumbally Stables Hatch, for just over a year.

The team announced the news via Instagram posts, where they asked their followers to get in touch if they spotted a suitable retail unit.

It is hoped that the new premises will contain a bakery and retail unit which will “allow us sell directly to all of you, our loyal customers, seven days a week,” the post reads.

“This has always been the BIG goal for both of us since returning from San Francisco and setting up Scéal Bakery in 2017,” they added.

Shane and Charlotte met on their first day of college at DIT’s Culinary Arts course when they were placed beside one another in class. The pair have worked in kitchens across the UK and the US, returning from San Francisco in 2017 to start the bakery.

Beginning with a micro-bakery on an acre farm in Glasnevin, the couple sold their produce in local farmers markets. The team at Scéal Bakery have said that it’s their dream to open a “neighbourhood bakery”.

Using methods they picked up in San Francisco, Charlotte and Shane place an emphasis on seasonal-driven produce for their menus, “during the summer months you’ll find an emphasis on Irish berries and rhubarb, transitioning to autumn stoned fruits and blackberry picking, and then to apples, quince and pears as we move into those colder winter months,” their website reads.

Visit the Scéal Bakery website for online purchase and local pick-up information.
