Locally owned spot “All Rosy Café” opened on Friday with a focus on Brazillian desserts.

Owner Rose Santos is a barista who spent many years working in the Irish coffee industry before branching out and setting up her own business. The new location on South King Street was a small newsagent for forty years before Rose and co took over the property.

Rose is an Irish native married to a Brazillian man and so hopes to merge the two cultures in this new spot. The will be selling locally roasted Roasted Brown coffee from Wicklow and making their own Brigadeiros in-house.

Brigadeiro are famous Brazilian sweets. It’s a scrumptious bite-size chocolate sweet which goes exceptionally well with coffee. The ingredients are condensed milk, butter and chocolate. You need to cook it at a specific temperature and for just the right amount of time for it to get the perfect consistency and velvety texture. After they are cooled, they are hand-rolled in the finest chocolate, nuts, and dry fruit sprinkles.
