Chef Mickael Viljanen is set to takeover Chapter One

The Michelin two-starred chef resigned from The Greenhouse earlier this week

News of Mickael Viljanen’s next move has emerged, after the chef resigned his role as head chef at the two-star Michelin restaurant, The Greenhouse earlier this week. Viljanen is set to takeover the kitchen at Chapter One, teaming up with Ross Lewis in a move that will see the two chefs become co-owners.

The Irish Times are reporting that some of Viljanen’s kitchen team may join him in the move across the Liffey, to the Parnell Square restaurant.

Viljanen has informed the Michelin organisation on his movements, told the Irish Times that he has no intention of altering his modern-European style of cooking in the move to Chapter One, “Ah, you know, tigers and stripes. I know what I know, but obviously we are going to build on what’s been done so far by the team and whoever is going to go with me,” he said.

The Greenhouse owner Eamonn O’Reilly issued a statement in the wake of Viljanen’s departure, writing that the move “has come as a complete surprise and shock after a very long and successful relationship”.

Viljanen took charge of the Dawson Street kitchen in 2012, helping to earn it a Michelin star in 2016 and a second in 2020.

“I wish Mickael the very best for the future. He is without question one of the most gifted chefs in Ireland and Great Britain. I will now take some time to decide how the Greenhouse moves forward,” O’Reilly added.
