Now, the moment you’ve all been waiting for has arrived – the Big Grill Festival’s hero dishes and menu highlights have been unveiled.

Here’s a sneak peek of the delectable delights that await you at Big Grill 2023:

Guest Restaurants and Their Tempting Hero Dishes

  • Andy Stubbs of Low and Slow will tempt your taste buds with free-range smoked pork ribs, accompanied by vinegar slaw and bread and butter pickles. And on Saturday, don’t miss Billy Durney’s unique twist on Ireland’s traditional bacon and cabbage combo with his smoked bacon ribs and grilled hispi cabbage.
  • Chef Trevor Moran, the Irish boy who conquered the Stateside food scene, brings the legendary Tennessee tomato sandwich hand roll to Dublin. Prepare for an umami explosion that you won’t soon forget.
  • From The Ashes is making their debut on the Big Grill scene, spinning the meat carousel with flanken beef ribs, offering the tantalizing Costillar Asado side of beef flank on the bone, served with flatbread, burnt spicy salsa, and crème fraîche.
  • Pat Martin’s West Tennessee Whole Hog is the highlight of the Sunday afternoon celebrations, featuring two extra-large Oxford Sandy pigs slow-roasted in a traditional brick pit for 30 hours, chopped, and served with slaw in a bun – the old-school way.

Meat Lovers’ Paradise

Calling all carnivores! Big Grill has an array of flame-kissed delights for you to sink your teeth into:

  • Hang Dai, along with American chef Andy Ricker, will enthrall you with Northern Thai cooking and their Baa Mii Tom Yam Muu Daeng – wheat noodles with roasted red pork, tom yam flavors, peanuts, and long beans. Don’t miss their Hang Dai duck pancakes, featuring wood-fired Skeaghanore duck, Irish leeks, cucumber, and finger-licking duck sauce.
  • Making their festival debut, Hawksmoor is serving up grilled native grass-fed beef with ember-baked onions, bone marrow garlic butter, and focaccia.
  • Team Reyna will delight with their custom-built, vertical charcoal döner grill, offering Irish lamb döner kebabs with Turkish salad, flatbread, and garlic & chili sauce.
  • Bahay presents a Liempo BBQ with crispy pork belly skewers, banana ketchup glaze, and marinated courgettes.
  • Mursal Saiq from Cuepoint London brings Afghan-London BBQ to the forefront, with oak-smoked beef rib on fluffy Afghan naan, Jameson Black Barrel BBQ Sauce, jalapeño jam, and pickled chili garnish.
  • The Chimac crew is spicing things up with Korean cheesesteaks featuring thinly cut ribeye, marinated Bulgogi style, peppers, onions, and caramelized grated potato – guaranteed to satisfy your cravings.

Veggie Delights and Festival Favourites

Big Grill caters to all palates, with vegetable, seafood, and cheese taking centre stage in some outstanding dishes:

  • Neighbourhood’s wood-fired courgette flatbread with smoked garlic and lovage emulsion, brown butter, hazelnut dressing, and Knockalara cheese.
  • Crudo’s BBQ’d Scamorza crostini featuring Remus’ crusty sourdough, flame-roasted Toonsbridge Scamorza cheese, and a choice of chili crisp honey or burnt onion jam.
  • Bites by Kwanghi’s BBQ miso aubergine marinated in chili and black garlic with pickled sweet corn.
  • Enjoy holiday vibes with Los Chicanos’ grilled Mexican street corn with guajillo and lime aioli and cotija cheese.

Great news! All the hero dishes at Big Grill 2023 are priced at just €7 each. So, prepare your appetites and get ready to sample an assortment of culinary delights without breaking the bank.

Dates, Tickets, and Exclusive Access

Mark your calendars for August 17th to 20th, when the sizzling Big Grill Festival will be in full swing at Herbert Park. General Admission tickets start from €24, and General Admission + Rancho Relaxo Access is priced at €55 (plus booking fees). However, do note that Whole Hog Tickets, granting access to all four days, have already sold out.

For an exclusive and luxurious experience, treat yourself to the Rancho Relaxo area, exclusively for adults aged 18 and above. Enjoy a private bar, fire pits, guaranteed seating, DJs, garden games, posh loos, and two complimentary drinks on arrival, along with fast track entry to the festival.
