Durrus is a farmhouse cheese made in West Cork with a mild creamy flavour and full fruity aftertaste. Pair that with unctuous wild mushrooms, black garlic, hazelnut, and black pepper butter you’ve got yourself a dish to dine for.

Fagiolini Verde – Sienna’s Malahide

This is the summer when peas go from mushy to must-have. This dish is a shining example of what the little fellas are capable of. This Fagiolini Verde is made up of chicken strips, lemon and spinach emulsion, and peas with a parmesan glaze. It looks so delicious you’d track to Malahide just for it.

It’s hard to beat a cheese toastie but add nduja to it, and it’s game-changing. First, it’s the original savoury sandwich stuffed with spice. Now add to that the crisp and crunchy bread, and you have no reason not to make a beeline for this chomper.
