Alumni Kitchen Table announced it would be taking bookings for its July 1 opening from this Thursday, June 16.
The new micro restaurant will seat a total of eight people. A micro restaurant is little more than a good chef in a kitchen with a few seats. At Alumni Kitchen Table, guests dine at one table set in the kitchen, in front of an open kitchen island. They will offer one sitting per evening at seven o clock on Friday and Saturdays only.
This has been in the works for years as Alumni Kitchen Table Limited was registered as a company on Tuesday, May 1 2018.
The business describes itself as a lodge and offers rooms for those wishing to partake of the limited dining experience. The dinner will be composed of a tasting menu with up to fifteen servings accompanied by matching wines.
The team at Neighbourhood Wine will support the wine list. At the same time, the restaurant will focus on local, hyper-seasonal cuisine. One dish to be featured is the ‘Garden Peas’. The dish is constructed with peas, egg, cider vinegar and lardo. Lardo is a type of thinly sliced salumi made by curing strips of fatback with rosemary and other herbs and spices
The team has taken inspiration for this dish from what they’ve grown in their garden. Every part of the vegetable is used. First, they make a dressing by juicing the husks and seasoning it with cider vinegar. To garnish the dish with they use the typically forgotten pea shoots.
To pair, they have chosen; Gut Oggau Maskerade white 2018. Gut Oggau is a cult natural wine producer from Burgenland in Austria. They make a family of different wines that come from biodynamic certified vineyards.
