Durrus Wild Mushroom Agnolotti – Mae

Everything that comes out of Mae always looks impressive, but this juicy number is exceptional level heavenly. Durrus is a farmhouse cheese made in West Cork with a mild creamy flavour and full fruity aftertaste. Pair that with unctuous wild mushrooms, black garlic, hazelnut, and black pepper butter you’ve got yourself a dish to dine for.

Fagiolini Verde – Sienna’s Malahide

This is the summer when peas go from mushy to must-have. This dish is a shining example of what the little fellas are capable of. This Fagiolini Verde is made up of chicken strips, lemon and spinach emulsion, and peas with a parmesan glaze. It looks so delicious you’d track to Malahide just for it.
