Morrison Room x Bech-Bailey Reservations Just Dropped.

Get your fancy pants ironed and on because talented power couple Jordan Bailey and Majken Bech-Bailey are back with a pop-up this August at the prestigious Fairmont Carton House.

When it comes to fine-dining finesse, Jordan’s got it locked down! This culinary virtuoso will be takin’ over the kitchen, spinnin’ a tasting menu that showcases the absolute best of local Irish produce. This power couple’s got the Michelin game on lock. Together they earned two stars for their spot, Aimsir, quicker than anyone in the Great Britain and Ireland Guide. Now, they’re droppin’ that knowledge at their own consultancy, Bech-Bailey!

The Morrison Room is seriously glam. It’s a dining destination that screams opulence and luxury. The Michelin Guide couldn’t resist showing love to this spot earlier this year. They said, “We all need a little glamour in our lives, and this restaurant within the vast, luxurious Carton House resort provides it in spades. The room is gloriously showy and boldly ornate; this is certainly dressing-up time.”

The exclusive dining experiences will take place every Wednesday, Thursday, and Friday throughout August. Starting from the 2 of August it will run weekly until the 1 of September. Patrons can expect a twelve-course tasting menu carefully curated by Jordan and Majken, complemented by the culinary brilliance of the Morrison Room team led by Executive Chef Gary Rogers and Restaurant Manager Marie Soudain. The dining extravaganza is priced at €150 per person, with an optional drinks pairing available at €80. Reservations are now open as of July 20th. Jordan and Majken’s inspiration for this extraordinary culinary journey comes from their time spent at Fairmont Carton House. Drawing on the stunning grounds and surroundings, Jordan’s menu will feature an array of locally foraged delights. Set to include honey from black native bees, wild berries, flowers, and pine.
