Dublin’s Meltdown has teamed up with Guy Sinnott, best known for his comfort food recipes, to create a new toastie, The Fiery Redhead.
Inspired by the red-headed home cook himself, this new toastie combination features spicy Nduja. Sinnott is a pandemic breakout star who became a household name for his comfort food cook-alongs. He earned thousands of food-loving followers during his time spent in quarantine.
The Fiery Redhead is a limited edition toastie. It comes in at nine euro and features spicy Nduja, mature white cheddar cheese, caramelised onion garnished with chopped chives, stacked between two slices of perfectly toasted fresh sourdough bread.
Founded by owner Maeve O’Malley in 2018, Meltdown is devoted to cheese. After starting out as a 3-month pop-up on Dublin’s Stephen Street Lower Meltdown has since grown to two permanent locations on Dublin’s Leeson Street and Montague Street.
Meltdown is about food that doesn’t compromise on flavour. Meltdown Hot Stuff, the secret ingredient to lots of the café’s most popular dishes, is also available in stores nationwide. Winedown, Meltdown’s sister restaurant, serves delicious global dishes, tapas-style, using seasonal Irish ingredients, and opens at the Montague Street location Tuesday to Saturday from five ’til late. Winedown launches its new spring menu this weekend.
Speaking about the Meltdown collab, Guy Sinnott said, “I eat most of my meals in sandwich form, so I am delighted to team up with Meltdown Dublin to create a signature toastie! The combination of spicy ‘Nduja, sweetness from the caramelised onion and richness of the cheddar comes together to make a balanced, seriously delicious toastie in this redheaded man’s opinion!”.

The Fiery Redhead toastie is exclusively available at Meltdown from April 1st to May 31st at the Leeson Street and Montague Street cafes.
