Dublin’s Own Cúán Greene Announces New Restaurant

Chef Cúán Greene is the maverick of Irish food and after donkey’s years of slaving away for the big shots in the food biz, he returned to Irish shores in 2021 to realise his vision – Ómós. Today he announced that he has secured land and venue for a restaurant that has been years in the making.

Nestled in the charming landscape of County Laois, Ireland, Ómós isn’t just your run-of-the-mill restaurant – it’s also gonna be a cosy guesthouse and a badass 4-acre farm. Think The Menu, and you wouldn’t be too far wrong.

After nursing this dream for a whopping 17 years, Cúán couldn’t hold it in any longer and spilled the beans (with a dash of nervous excitement) in his newsletter – also named Ómós. This ain’t just a new beginning; it’s an epic extension of the wild tales he’s been sharing over the past few years.

Situated 2km from Abbeyleix, Ómós will set up shop in a place surrounded by ancient beech trees, rolling hills, and an Insta-worthy old mill pond. The crown jewel, Millbrook House, is currently getting a facelift to house 16 bedrooms. Think global auberges and boutique hotels – that’s the vibe they’re going for. Modern Irish charm, kickass food, productive gardens, and spaces so inviting you’ll wanna move in.

The restaurant, designed by the hotshot Ryan W. Kennihan and his architect crew, will be a groovy take on an Irish farm. Backed by a market garden, it’s gonna blend into the countryside like it was always there. ASCA and Relief Gallery are on board for the interior design – making sure the place caters to all your basic human needs, plus a little extra.

Right smack in the middle of Ireland’s breadbasket, Ómós plans to throw some love to the local talent. Expect collaborations with skilled craftspersons and producers, celebrating the region’s awesomeness with locally sourced ingredients. And they’re not limiting their taste buds – bold flavours from all over are on the menu.

While the build is just a twinkle in its daddy’s eye, the grand opening is pencilled in for July 2025. They’ll keep you entertained with regular updates, sharing juicy tidbits about people, places, and grub.

Before the big shebang, expect some wild pop-ups and collabs in the coming year. Ómós wants to tease you a bit, give you a taste of the excitement building up. In the meantime, snoop around their new website, and brace yourself for the awesomeness that’s about to unfold!
